Healthy Blueberry Muffins – Absolutely Delicious

Blueberry Muffins

You cannot go wrong with this family favorite.

Do you ever walk by a bakery and eye the fresh and warm muffins in the window; wishing you could eat one whole muffin and feel great about it?   As you walk past the muffins, your mouth is watering and you keep thinking how fresh they are, but you stay away because you know how bad and guilty you will feel after eating it.

Eating these healthy and delicious blueberry muffins will not leave you feeling that way. They are packed with healthy fats and ingredients that will keep you energized and guilt free. Plus, blueberries are a great source of antioxidants and helps protect against disease and age-related health risks. Your body will thank you!

The ingredients and instructions are below. Add this to your next grocery list.

Ingredients

  • 3 organic eggs
  • ½ cup whole milk Greek yogurt
  • 1/3 cup grapeseed oil
  • ½ cup Xylitol
  • 1 Tbsp. vanilla extract
  • ½ cup coconut flour
  • ¼ tsp sea salt
  • ¼ tsp baking soda
  • 1 cup fresh or frozen blueberries

Directions

Preheat oven to 350, and line muffin tins.
In a food processor combine eggs, yogurt, oil, vanilla and Xylitol. Pulse until mixed.
Pulse in coconut flour, salt, and baking soda. Add blueberries, and pulse two or three times to break up slightly.
Fill lined muffin tins. Bake for 20-25 minutes until tops are slightly browned. Makes 10 muffins.
